Here are a few of our favorite recipes.
Oatmeal Pancakes
From Sandie Tricker, Jim's mother-in-law
1/2 cup flour
2 cups quick cooking oatmeal
2 tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
2 cups buttermilk
4 tbsp. melted butter
2 large eggs
cooking spray
Combine the first 7 ingredients in a large bowl and stir with a fork.
Combine buttermilk, melted butter and eggs in a small bowl, mix.
Add this to the flour mixture and stir well, it will be thick.
Preheat griddle to medium heat and spray with cooking spray.
Cook about 2 1/2 tbsp batter per pancake. Cook until bubbles form
and then turn.
Serve with butter and maple syrup.

Special K Bars
1 cup Karo Light (not lite) Syrup
1 cup Sugar
1 cup Skippy Creamy peanut butter
2 teaspoons vanilla
1 teaspoon salt
6 cups Special K Cereal
½ bag Hershey's milk chocolate chips
½ bag butterscotch chips
Special K bars have been the topic of conversation around work as of late, how best to make them. I've taken it upon myself to separate fact from fiction, here is what I've found. Don't bring anything to a boil, fold don't stir, never exert downward pressure, use heaping measurements for everything except the cereal, use 6 cups.
In a large pot almost bring to a boil the syrup and sugar, take it off of the heat and stir in the peanut butter, vanilla and salt. Fold (don't stir) in the cereal. Dump the results into your container and gently distribute taking your time, don't smash it in there turning everything into pulp.
Nuke your chips in the microwave for 2 minutes. When they come out they'll still look whole, but give them a stir and they all come melting together. Spread over the bars, again taking your time and not mashing everything down. The extra effort in being gentle with everything pays off in the end.
Seems simple enough, but then again...I've had a lot of bad bars in church basements and block parties.

Calico Beans
A favorite at office and family gatherings.
1/2 Pound Bacon
1/2 Pound Seasoned Sausage
1/2 Pound Hamburger
1 Diced Onion
Brown the above together. When done, add ingredients below.
1 28 Ounce Can Pork & Beans, do not drain
1 16 Ounce Can Lima Beans, drain
1 16 Ounce Can Red Kidney Beans, drain
1 16 Ounce Can Navy Beans, drain
1 & 1/2 Cup Brown Sugar
1 & 1/2 Cup Ketchup
1 & 1/2 Tablespoon Prepared Mustard
Simmer for about an hour. You can substitute most any kind of beans, except for the Pork & Beans.
